The variety: Olympia
Olive cultivars differ in phenolic potential the way grape varieties differ in tannin. The Olympia variety — native to this corner of Greece — is a phenolic overachiever, especially when picked green. Olivea presses 100% Olympia olives, no blending, from Kalamata in Messinia.
The climate: stress makes strength
Polyphenols are the olive tree's own defense chemistry, and trees produce more of them under the right stress: hot dry summers, rocky soils, sea air. Messinia's microclimate applies exactly that pressure. Pampered irrigated groves yield more oil — with less in it.
The harvest: early, fast, cold
Two decisions cost yield and buy potency. Early harvest: green olives carry peak polyphenols but give far less oil. Speed: fruit is cold-pressed within hours of picking, before enzymatic breakdown starts. This is why genuine high phenolic oil is never cheap — you're paying for oil the producer chose not to make.
