"Can I cook with it, or is that a waste?" — the most common question about premium high phenolic olive oil. Short answer: you can, but a smarter split gets you far more from every bottle.

The heat facts

EVOO is more heat-stable than its reputation — polyphenols actually protect the oil itself from oxidation while cooking. Moderate sautéing preserves a meaningful share of them. What genuinely destroys polyphenols is prolonged high heat, reuse, and — more than anything — time, light, and air after opening.

  1. Finishing: a raw pour over soup, grilled fish, beans, or roast vegetables right before serving.
